How To Survive This Winter With Delicious Soup Recipes

If you’re like us then you dread the winter seasons full of stuffy noses, freezing cold hands and toes, those adding pounds, and being chained to your home because of the disastrous weather outside. Well, believe it or not, winter is a season that comes every year, which makes it difficult to escape. Unless you plan to fly to a warm island every winter then props to you! With these tasty soup recipes, we hope to make this winter a bit more enjoyable for you and the whole family. Grabbing a warm bowl of soup under a cozy blanket, in front of a family-friendly movie wouldn’t be the worst thing… Now you’re probably reconsidering booking your flight!

Broccoli Cheddar

This soup is loaded with comfort and cheese, and won’t make you fall asleep right after! This rendition of broccoli-cheddar soup is lighter than usual but still extra delicious! Here’s what you’ll need:

  • 2 onions
  • 4 garlic cloves
  • 3 Tbsp. unsalted butter
  • ½ tsp. crushed red pepper flakes, plus more for sprinkling
  • Kosher salt
  • Freshly ground black pepper
  • 2 heads of broccoli
  • 1 medium russet potato
  • 8 oz. sharp cheddar cheese
  • 4 thick slices rustic white bread
  • ½ cup plain Greek yogurt

Creamy Tomato With Cheesy Croutons

This recipe is one of our favorites! Basically we purée the ingredients using an immersion blender or regular blender, either one works. If you are vegan you can also substitute sour cream and add some olive oil at the end.

Ingredients:

  • 2 large onions
  • 2 medium carrots
  • 1 28-ounce can whole peeled tomatoes
  • 5 tablespoons extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 1 teaspoon hot smoked paprika
  • 4 ounces sharp cheddar cheese
  • 1 15-ounce can crushed tomatoes
  • 2 tablespoons Worcestershire sauce
  • ¼ cup sour cream or whole-milk Greek yogurt, plus more for serving
  • 4 thick-cut slices country bread

You can also dip a loaf of bread in either of these but we try our best to stay on the healthier side and omit that option!
